Royal Mughal - Style Egg Curry
Ingredients:-
Eggs - 5 (hard boiled )
Onion - 1
Ginger- 1 inch
Garlic- 8 cloves
Green chillies- 4
Cashew nuts- 5 pcs
Cumin - 1/2 tsp
Turmeric- 1/4 tsp
Coriander powder- 1 tsp
Cumin powder- 1/2 tsp
Garam masala - 1/2 tsp
Kasuri Methi - 1/4 tsp
Crushed pepper- 1/2 tsp
Curd - 1 cup
Mint leaves- handful
Coriander leaves- handful
Salt - To Taste
Water - As Required
Oil - 1 tb spn
Butter - 1 tb spn
Method:-
In a pan add oil, cumin,onion , salt & brown the onions. Then add cashews nuts, ginger, garlic, green chillies, mint leaves & cook till cashews get slightly colour. Now add turmeric in the last, let it cool & grind into a paste.
Same pan add butter, coriander powder, cumin powder, garam masala powder, kasuri methi & add curd & simmer for 4-5 minutes. Then add onion - cashew paste & let it cook for 5 minutes. In the last add crushed pepper, boiled eggs, coriander leaves.
Serve it with Hot Naan & enjoy it.
